Cookiefest Day 3: Peanut Butter Cookies and Red Hot Chai
Sometimes it’s fantastic to really get complicated with your cooking; it can be so relaxing to find a really intricate recipe, especially for baking, and to carefully and precisely measure, sift, fold, roll, cut, and bake.
Sometimes, though, you just want a damn cookie, and you want it NOW. And you totally forgot to buy flour.
For those times, there are peanut butter cookies. I love these things. And Red Hot rooibos chai is the perfect complement – the extreme spiciness of the cayenne cuts right through the richness of the peanut butter. Which means that you can both eat more cookies, and drink more tea! Win-win!
Three-Ingredient Peanut Butter Cookies
Ingredients
1c peanut butter (either chunky or smooth; your choice)
1c sugar
1 egg
Procedure
- Preheat oven to 350 degrees F. Grease two baking sheets, or line with parchment paper.
- Combine the peanut butter, sugar, and egg. Mix until smooth.
- Drop spoonfuls of dough onto the prepared baking sheet. Bake for 6 to 8 minutes.
- Do not overbake! These cookies are best when they are still soft and just barely brown on the bottoms.
