Tea Tipples: Five O’Clock Tea
You know you’ve been missing your tea cocktails! Oh, sure, you’ve probably been drinking plenty even without our little guide to mixing your two favourite liquids, but come on, let’s be honest – it’s nice to get some ideas from other sources so you don’t have to think when it comes to blending great tastes sometimes.
We do that, too – this particular cocktail originates at the Ocean bar in Easton, Pennsylvania. And how simple and delicious does it sound?!
Five O’Clock Tea
(adapted from Ocean in Easton, Pennsylvania)
Ingredients:
- 3.5oz tea-infused gin
- 2oz honey simple syrup
- 1/2oz fresh lemon juice
Preparation:
- Make the tea-infused gin:
- Steep 2oz of Earl Black tea in 1 (750ml) bottle of gin for at least 24 hours, but up to a week.
- Strain and discard spent leaves.
- Make the honey simple syrup:
- Combine 1c honey (try orange blossom for the best pairing with the Earl Black bergamot notes) and 1/2c warm water in a saucepan.
- Heat over medium-low heat until the honey has dissolved completely, stirring frequently. Do NOT let this boil.
- Cool and bottle. This will keep in the fridge for a couple of weeks.
- Make the drink:
- Combine ingredients in a shaker filled halfway with ice.
- Shake and strain into a martini glass.
Serves 1 (but the infused gin and honey syrup will let you make quite a few of these cocktails)
